Having escaped the pending midwest ice storm on Thursday night in OKC, I got back to Atlanta and decided the time was right to place my order. Many thanks to Mike in sales for all his help in choosing options. I selected a YS640, regular cart, regular outside shelves, with just about everything else but the thermal wrap. Mike even suggested taking advantage of the shipping by also ordering a half pallet of pellets. I'll start with hickory, which is what I'm accustomed to, and a little pecan, and will look forward to your opinions/insight on other pellet flavors.

Up to now, I've continued to browse the forum, looking for tips, techniques, or other information to make the best of my food smoking preparation going forward.

Now I just need a project to take my mind off of the wait for the FedEx call....

Got the email that my YS640 has been shipped!!! Scheduled to be here on Thursday. Much faster than I was expecting. I'm sure details will be included with the smoker. I've read the thread on the temp test, but can't find specifics on the recommendations for the first burn. Is there a link available?

My YS640 arrived at 2pm today. Thanks to the FedEx guy who was strong enough to back both the smoker and 600 lb of pellets down the driveway. Unpacked and inspected and not a scratch. Loaded it up with all the accessories for the 2 hour burn, cooled it down, and reset everything to grill/smoke a rack of chicken wings. Want the first few cooks to finish in less than an hour as I get familiar with it. Here are a few pics. First meal a success.

Here's my wing rack. Bought 10 years ago. can't find them anymore.

Wings loaded onto the rack and placed into the smoker.

Final product. 350 degrees for an hour. Likely bump the temp by 25 degrees the next time and reduce time by 15 minutes.
